Originally made for preparing Japanese dishes, the santoku knife has long since found its way into international kitchens. A Santoku knife is ideal for preparing wok dishes and wafer-thin sushi. It cuts and chops meat, fish, vegetables and herbs with ease, although it was designed solely for pressure cutting and not for weighing.
