The chef's knife is the jack-of-all-trades among knives: its wide, strong blade glides smoothly through fish and meat and chops even the toughest vegetables. A chef's knife also handles weighing herbs and chopping nuts with aplomb: to do this, simply place the tip of the knife on the chopping board and move the blade up and down.
And as if that weren't enough, you can use the broad side of the knife to evenly flatten slices of meat like a cutlet. With so much flexibility, it's no wonder that a chef's knife should be part of every kitchen's basic equipment.
